Health inspections: Oct. 10, 2015

AMERICUS — The following food service inspections were conducted recently by Sumter County Environmental Health.
• Catering Creations, 171 McMath Mill Road, Americus — Aug. 17 — 94 A
— Observed the Certified Food Safety Manager certificate has expired. Need to provide documentation for either registration of class or certificate of CFSM or equivalent to our office by 8/24/15.
• Giggles Self-Serve Frozen Yogurt, 1601-A Ga. Highway 27 East, Americus — July 20 — 86 B
— Observed Time as Public Health Control (TPHC) chart not filled out for today’s fruit toppings. Previous records were not available for review. Refrigerate toppings using as TPHC should be logged to show start time and four-hour discard time through out each day. Corrective Action: Toppings were discarded. Pans will be refilled and time will be documented.
— Observed no thermometer in the walk-in cooler. Thermometers should be placed in the walk-in cooler to document temperature. Corrective action: Thermometer will be put in the cooler. Correct By: 07/22/2015
— Observed no cold water at the hand washing sink. Hand washing sink should have both hot and cold water. Corrective action: Cold water line will be reconnected to the hand wash sink. Correct By: 07/21/2015.
— Remarks: Using TPHC for fruit toppings that are labeled refrigerate after opening. Walk-in cooler temperatures were marginal. Discussed with person in charge.
• Granny’s Kitchen, 118-A U.S. Highway 19 South, Americus — Aug. 14 — 99 A
— Observed bare wood shelf in the walk-in cooler and two bare wood shelves in dry storage area. Bare wood shelves should be painted or sealed so they are non-absorbent and easily cleanable. Corrective action: Bare wood shelves should be painted or sealed within 30 days.  Correct By: 08/27/2015.
— Cut tomatoes that were cooling had just been prepped about 30 minutes earlier and had been put on ice. Raw chicken in cold-hold that was at 64 degrees F. had been taken out of cooler and washed/cleaned/cut up earlier that morning (about two hours).
