Health inspections: June 20, 2014

AMERICUS — The following food service inspections were conducted recently by Sumter County Environmental Health.

• American Legion Post 558, 116 Ga. Highway 30 West, Americus — June 17 — 84 B

— Observed canned goods stored past use by/expiration dates. Foods were discarded.

 — Observed spray bottle with liquid in it with no name or label on it. Solution was poured out.

— Observed chlorine sanitizer above proper minimum strength. Bleach should be approximately 50-100 ppm. Solution was remixed to proper strength and labeled as bleach.

— Observed no handwashing sign at handwash sinks in rear men’s and ladies’ rooms.

— No chemical test kit available for checking the sanitizer levels in spray bottles or three-compartment sink. Need to order test strips for bleach.

— Exhaust hood/fire suppression system is not currently inspected and tagged. Fryers or cooking on top of stove is not permitted until system has been inspected and tagged as operational.

— Remarks: Excess equipment and utensils need to be removed from kitchen.

• Bison Valley/R&K Catering, 1085 Tallent Store Road, Americus — June 17 — 100 A

• Middle Flint Behavioral Health Care — New Beginnings, 952 Anthony Drive, Americus — June 13 — 100 A

• Ming Garden, 1206 Crawford St., Americus — June 18 — 81 B

— Observed pan lid and cleaning utensil in handwash sink. Handwash sink may only be used for washing hands. Corrected On-Site.

— Observed potentially hazardous food (cooked pork, chicken being held using time with new and old time stickers still on the counter). Old time stickers must be discarded at end of that time. Also found food in cold-hold with time in/out on container. Once TPHC procedure is started food may not be returned to temperature control. Old labels were discarded and time will be used for chicken that was labeled 1-5 p.m.

— Observed fried chicken and pork cooling on trays piled thick. Meats were spread out in thinner layers and pans spaced out more on rack to allow better/faster cooling.

— Probe thermometer did not appear to be working properly. Person in charge will change battery or get another, more accurate thermometer.

— Wet wiping cloth not stored in sanitizing solution between uses. Observed bleach sanitizer in bucket below minimum strength required. Solution was remade to proper strength; wiping cloth stored in sanitizer bucket.

— Observed fruit and vegetable sink being used for purposes other than washing fruits and vegetables.
