AMERICUS  — The following food service inspections were conducted by Sumter County Environmental Health.
• Hibachi Express, 1556 E. Forsyth St., Americus — Jan. 26 — 82 B
— Observed bucket and rubber gloves in one hand wash sink and phone/electrical cord in other hand wash sink. Employees may not store any items in hand wash sink. It must be assessable to employees at all times. Items were removed from sink. Corrected On-Site.
— Observed raw animal food (two cartons of raw shell eggs) stored next to ready to eat foods (noodles, cooked chicken) and not properly separated. Eggs were moved below ready to eat foods.  Corrected On-Site.
— Observed large pan of cooked chicken cooling on ice. However, pan was not surrounded by ice, only touching bottom of pan. Need to break down chicken into smaller amounts and shallower in pans. Pans should be surrounded by ice, not just sit on top. Also, could place pans in freezer to rapidly chill. Corrected On-Site.
— Observed ice scoop broken/cracked with handle missing stored in soy sauce. Broken scoop was discarded and replaced with new one. Corrected On-Site.
— Observed bottles, boxes, trash on the ground behind dumpster. Need to clean up trash on ground by Feb. 2.
— Remarks: Observed chicken cooling on ice on prep line. There was no sticker or procedure documenting that Time as Public Health Control was being used for the cooked chicken. After discussing with owner by phone, it was determined that they did want to use TPHC for chicken. Procedure was given to PIC to complete. New rules were discussed with PIC.
• Higher Grounds Cafe-WPS, 800 GSW State University Drive, Americus — Oct. 5, 2015 — 96 A
— Observed a bucket with sanitizer in it not reading the require amount. Sanitizer bucket should read between 150-200 ppm. Bucket was emptied and refilled with the correct amount.
— Observed a container with clean utensils. Some utensils had food still stuck on the handle and bottom. Utensils should be cleaned where there are no food residue on them. Utensils were washed, rinsed, and sanitized again.
— Remarks: Asked the PIC how they cleaned the dining tables and was told they only use one bucket with sanitizer in it. The proper way to sanitize tables is either two bucket method or a spray bottle with sanitizer in and a paper towel. Spray bottle and paper towel will be used. Corrected On-Site.
• JJ’s Wings & Things, 102 W. Lamar St., Americus — May 31 — 89 B
— Observed no time/temperature control for safety foods (cooked vegetables, chicken wraps, raw chicken and beef) prepared onsite and held more than 24 hours with no date marking. Food containers will be labeled. Corrected On-Site.
— Observed the sanitizer spray bottle with quats reading too high. And observed the three-compartment sanitizer sink reading too low of sanitizers. Sink was refilled to the correct sanitizer. And the spray bottle will be filled with water to dilute the sanitizer. Corrected On-Site.
— Observed no hot water in the women bathrooms. Hot water should be provided at all times at all of the employee handwashing sinks. Plumber will be called to fix the issue. Correct by 06/03/2016.
• King Motel, 1008 N. Martin Luther King Jr. Blvd., Americus (tourist accommodation inspection) — May 31 — 96 A
— Observed tourist inspection report from 2014 posted at front desk. Facility must have latest/most current inspection posted at front desk. This inspection will be posted. Corrected On-Site.
— Ventilation in bathroom is not adequate. There is no mechanical ventilation and windows can’t be opened (painted shut?). Will discuss options for improving ventilation with owners.
• King’s Deli, 101 W. Jefferson St., Americus — Feb. 15 — 93 A
— Observed no handwashing liquids at the handwashing sink in the food prep area. Hand soap should be provided at all hand washing sinks in order for employees and customer to properly washed their hands to prevent contamination. Soap was provided. Corrected On-Site.
— Observed time/temperature control for safety foods (chicken) that was partially cooked on 2/13/16 with temperature reading ranges between 43-48 degrees F. The pans that the chicken were in were thick, which caused the chicken temperature above 41 degrees F. If TCS foods are partially cooked, they must be cooled to 41 degrees F. within 6 hours. Chicken will be discarded and the manager will be given a procedure on how to properly use non-continuous cooking. Corrected On-Site.
— Remarks: Spoke with the CFSM about the new food rule changes that went into effect. Gave the CFSM handouts that explain the new changes.
• Knight’s Inn, 1007 Martin Luther King Jr. Blvd., Americus — (food service inspection) — Feb. 18  — 90 A
— Observed no paper towels at the hand washing sink and in the men/women bathroom. Hand drying provision like paper towels, hand dryer, etc. should be readily available to dry people hands. Paper towels will be provided.
— Asked the person in charge about how they cleaned the dinning tables. Was told that they use a soap and water with a cloth to clean the tables. Explained to her that they can either use a spray bottle with sanitizer and paper towels or two-bucket method. They will start to use spray bottle with sanitizer and paper towel to clean the tables.
— Remarks: Spoke with the person in charge about the new food rule changes and gave the handouts explaining the changes.
• Knight’s Inn, 1007 Martin Luther King Jr. Blvd., Americus — (tourist accommodation inspection) — May 27 — 96 A
— Observed no current inspection report displayed. Had a old inspection (02/11/2015). Current Inspection must be posted at all times. New inspection will be posted. Corrected On-Site.
— Observed in bathroom area behind toilet seat paint was peeling off of the wall.
• Krystal, 102 Tripp St., Americus — Dec. 9, 2015 — 85 B
— Observed time/temperature control for safety food (corn dogs) with a temperature of 128 and 126 degree F. TCS foods for hot holding should be at least 135 degrees F. or hotter. Corn-dogs were thrown out. Corrected On-Site.
— Observed the thermometer in the reach-in cooler in the front service area not working properly. Thermometer should be provided and working accurately in order to provide an accurate temp. Working thermometer will be provided in one day (12-10-15).
— Observed spray sanitizer bottle and cleaning cloths stored in the vegetables and fruit sink. Vegetable and fruit sink is only for washing fruits and vegetables, not for storage. Spray bottle and cleaning supplies were removed from the sink. Corrected On-Site
— Remarks: Spoke with the manager about the new food rule changes. Gave her the handouts for the changes also.
• La Hacienda Mexican Restaurant, 1602 E. Forsyth St., Americus — Jan. 14 — 96 A
— Observed in the women bathroom with no paper towels. Paper towels should always be provided when washing hands. Paper towels were added. Corrected On-Site.
— Remarks: Spoke with the person in charge about the new food rule changes. Gave them the new handouts that explains the rules.
• Lakeshore Marine, 4262 U.S. Highway 280 East, Cobb — (food service inspection) — May 27 — 90 A
— Observed raw animal foods stored with ready to eat foods in both reach-in coolers. Raw foods such as egg/milk mixture, raw meats, etc. should be stored below/separate from ready to eat foods. Raw foods were moved to lower shelves; ready to eat foods moved to upper shelves. Corrected On-Site.
— Observed bare wood surfaces on walls, floors, shelving, ceiling etc. in new kitchen area. These need to be painted or sealed. Exposed framing and rafters need to be covered with painted sheet rock or other smooth, non-absorbent finishes. Correct By: 06/10/2016.
— Remarks: Beverage cooler in new kitchen needs to be replaced with cooler that is NSF and designed for cooling packaged and unpackaged TCS foods. Correct by July 1, 2016.
• Lakeshore Marine RV Park, 4262 U.S. Highway 280 East, Cobb — (tourist accommodation inspection) — May 10 — 89 B
— Each RV space needs a vacuum breaker installed on the water faucet to prevent back siphonage.
— Lot 212 is not properly capped (sewer connection).
— There is trash on the ground in dumpster area.
— Over half of the trailer spaces have numbers that are faded out and are difficult/impossible to read. These need to be clearly marked and visible from the road. Also, there is a large pile of limbs/leaves that needs to be burned or removed.
• LB’s Bar & Lounge, 116 Lamar St., Americus — Jan. 28 — 100A
• Lillian Carter Health & Rehabilitation, 225 Hospital St., Plains — Dec. 15, 2015 — 97 A
— Observed time/temperature control for safety foods (milk gallons) with expired dates. (12-14-15). TCS foods should be thrown out on the expired date. Milk was thrown out. Corrected On-Site.
— Remarks: Gave the manager the new handouts for the food rule changes.
• Little Brother’s Bistro & Cafe, 133 W. Lamar St., Americus — Jan. 28 — 96 A
— Observed reusable cups in the kitchen area and on the counters in the service area. Employees should only drink out of single-use disposal cups wit lid and straw. Spoke with the PIC and will change to disposal cups and straw. Corrected On-Site.
— Remarks: Spoke with the PIC about the new food rules changes and gave handouts explaining the rules.
• Little Caesar’s, 1126 E. Lamar St., Americus — Feb. 8 — 96 A
— Observed no Certified Food Safety Manager at the establishment. There should be a CFSM at each establishment. A manager must present a receipt that they have sign up for a class within two weeks to Health Department (Feb. 22, 2016) or an original copy of the CFSM.

• M & W RV Park, 118 Ga. Highway 45 North, Plains — (tourist accommodation inspection) — April 8 — 97 A
— Need to mark trailer station 1, 15, and 16.
• Madea’s Diner & Bakery, 105 Rucker St., Americus — Jan. 12 — 100 A
