Health inspections: July 20, 2016

AMERICUS  — The following food service inspections were conducted by Sumter County Environmental Health.
• Perry Wellness Center Inc., 302 E. Furlow St., Americus — March 30 — 96 A
— Observed time/temperature control for safety (bag of green beans) foods stored in the reach-in cooler in the main kitchen area out of day (3/28/2016). TCS foods should be thrown out at the end of the day of discard date. Bag of green beans were thrown out. Corrected On-Site.
— Remarks: Spoke with the CFSM about the new food rules changes. Gave him the new handouts that explains the changes.
• Phoebe Sumter Medical Center, 126 U.S. Highway 280 West, Americus — April 1 — 89 B
— Observed TCS foods (Time/Temp control for Safety) held at greater than 41 degrees F.  (Tomaotes in cold drawer under grill and past (shell eggs in reach-in cooler under salad bar.) TCS foods must be maintained at 41 degrees F. or colder. Coolers were not working properly and maintenance was called to check them. The tomatoes were discarded. Eggs were cooked immediately. — Remarks: New food service rules were discussed and handouts provided.
• Pizza Hut, 1206 Crawford St., Americus — Jan. 6 — 97 A
— Observed employee with no hair restraint working in food prep. Employee was given hair net to restrain hair. Corrected On-Site.
• Plains Inn & Antiques, 106 Main St., Plains — (tourist accommodation inspection) — May 17 — 93 A
— No annual gas-fired inspection records available for review. Correct By: 05/31/2016.
— Observed milk stored past expiration date (May 9). Milk was discarded. Observed cereal taken out of original containers and put in plastic containers. Recommend using only single-service boxes of cereal. Corrected On-Site.
• Quality Inn, 1205 Martin Luther King Jr. Blvd., Americus — (tourist accommodation inspection) — Nov. 16, 2015 — 100 A
• Quality Inn Restaurant, 1205 Martin Luther King Jr. Blvd., Americus — (food service inspection) — May 11 — 78 C
— Observed employee handling ready to eat foods (cakes) with bare hands in the main kitchen area. Gloves are required to wear when handling ready to eat food to prevent contamination. Employee threw the RTE foods away that were handled with bare hands and then washed and sanitized his hands; then he put gloves on. Corrected On-Site.
— Observed in the three-compartment sink sanitizer for quaternary not reading the proper minimum strength for manual warewashing sink. The sanitizer needs to be the proper strength in order for sanitizer to properly sanitize the dishes. The sanitizer was reconnected to the sink and read the proper strength. Corrected On-Site.
— Observed the dish machine not reading the proper strength for chlorine sanitizer. The sanitizer was empty. The sanitizer should read the proper strength in order to properly sanitize the dishes. The empty sanitizer was replaced with a new sanitizer bottle. Corrected On-Site.
— Observed time/temperature control for safety foods (mac and cheese, butter beans, turnips) hot-held for reheat was not reheated to the proper temperature. Temperatures were reading 116-120 degrees F. TCS foods for hot-hold should be hot held at 135 degrees F. or hotter. TCS foods were reheated to proper temperatures.  Corrected On-Site.
— Remarks: Follow up will be done in the new 30 days.
• Roman Oven, 1604-H Vienna Highway, Americus — March 28 — 100 A
• Rosemary & Thyme, 125 W. Lamar St., Americus — Dec. 29, 2015 — 92 A
— Observed TCS (Time/temperature control for Safety) foods stored in reach-in cooler and prep table cooler with date marks out of date (cut tomatoes, apple slaw, cut onions, cut cucumbers, cut carrots). TCS foods were stored past the 7-day use-by date. TCS foods were discarded. Corrected On-Site.
— Observed boxes of foods (vegetables, etc.) in walk-in cooler and boxes of paper products in storage area stored on the ground. Foods and paper products should be stored off the ground (6 inches) in walk-in cooler and storage area. Boxes were placed on shelves.
— Remarks: Spoke with the CFSM about the new food rules and went over the new handouts.
• Suave, 1200 Southerfield Road, Americus — Jan. 28 — 89 B
— Observed dishes being washed in two-compartment sink. Employees must use three-compartment sink to properly wash rinse and sanitize dishes. Corrected On-Site.
— Observed processed ready-to-eat, potentially hazardous food (hot-dogs) opened, not properly date-marked. Date packages of hot-dogs/deli meat after opening. Corrected On-Site.
— Air gap not installed on three-compartment sink and ice maker. Correct By: 02/03/2016.
— Remarks: Discussed new food rules.
• Subway 23880, 110 U.S. Highway 280, Americus — May 13 — 92 A
— Observed no verifiable information about employee health on how to report if they are sick. Information should be readily accessible for employees to find and see what type of symptoms/illnesses they need to report to the PIC. Will bring new handouts for them.
— Observed the sanitizer bucket strength not at the minimum strength to sanitize the cutting boards. Quaternary ammonium sanitizer strength should be at the proper minimum strength to properly sanitize the cutting boards. Bucket was refilled to the correct amount. Corrected On-Site.
• Sumter County Correctional Institute/ABL Prison — Jan. 12 — 90 A
— Observed open beverage containers (coffee cups, water bottles) in food preparation areas and over/next to clean equipment/utensils. Employees may only drink from disposable cup with lid and straw in food prep areas. Cups and bottle were discarded. Corrected On-Site.
— Observed cartons of milk with no date marks/use-by dates. Milk will be returned. Corrected On-Site.
• Sumter County Elementary School, 438 Bumphead Road, Americus — Feb. 11 — 100 A
• Sumter County Intermediate School, 438 Bumphead Road, Americus — March 4 — 91 A
— Observed potentially hazardous food cold-held at greater than 41 degrees F. (slaw on serving line). Slaw had been made that day, temperatures ranged from 43-50 degrees F. Discussed with PIC and it was noted that slaw was being held on ice, next to hot foods (baked beans) and side of the “cold” unit was very warm. Slaw will need to be made earlier in the day or on previous day in order to cool properly. Pre-chilling other ingredients (mayo, etc.) will help to chill rapidly. Slaw was moved away from hot foods and will be discarded at end of lunch (using TPHC). Corrected On-Site.
— Potentially hazardous food (three pans of chicken patties in hot-hold cabinet) not held at 135 degrees F. or above. Manager will have hot-hold unit checked by maintenance. Patties were moved back to oven and reheated to proper temperature for hot-holding. Corrected On-Site.
— Remarks: New changes in food service rules were discussed with manager.
• Sumter County Middle School, 200 Industrial Blvd., Americus — March 2 — 91 A
— Observed potentially hazardous food cold-held at greater than 41 degrees F. on serving line  (slaw, ranch dressing). More ice was added to dressings; less dressings displayed. Slaw was discarded. Additional slaw in cooler was at proper temperature. Corrected On-Site.
• Sumter County Primary School, 123 Learning Lane, Americus — March 9 — 100 A
• Sumter Retirement Village, 2124 U.S. Highway 280 West, Plains — Dec. 3, 2015 — 100 A
• Sumter Youth Development Campus, 300 McMath Mill Road, Americus — Dec. 11, 2015 — 100 A
• Taco Bell, 725 E. Forsyth St., Americus — Jan. 8 — 100 A
• The Hawg Pen, 108 S. M.L. Hudson St., Plains — Sept. 15, 2015 —  100 A
• The Station, 222 W. Lamar St., Americus — April 6 — 87 B
— Observed time/temperature control for safety foods (cut tomatoes (dated day before date), cheese, crab meat) cold-held at greater than 41 degrees F. TCS foods that are cold-held should be held 41 degrees F. or below. TCS foods were moved to the other cooler to be able to cool down to 41 degrees F. or below. (It was not clear as to why cooler temperature was elevated. Could be that employees had been in and out a lot that morning. Thermometer was reading 50+ degrees F. PIC will contact repair service to have it checked.) Corrected On-Site.
— Observed time/temperature control for safety foods (cut ham slices) with date that exceeded the seven-day rule. TCS foods that require datemarking shall be discarded the day of the seventh  date. Cut TCS food was discarded. Corrected On-Site.
