Health inspections: Nov. 4, 2015

AMERICUS — The following food service inspections were conducted recently by Sumter County Environmental Health.
• Pizza Hut, 1206 Crawford St., Americus — July 31 — 99 A
— Observed wet mop on the floor next to mop sink. Mops should be hung up to dry. Corrective action: Mop was hung up. Corrected On-Site.
• South Georgia Technical College Cafeteria, 900 South Georgia Tech Parkway, Americus — Aug. 18 — 92 A
—  Observed the sanitizer spray bottle with quat solution below the proper minimum concentration. Quat needs to be between 150 ppm-300 ppm. Corrective action: -Spray bottle was refilled.
— Observed pan of gravy sitting on a counter wrapped with a temperature of 105 degrees F. PIC said gravy had been cooling since 8:30 a.m. and food had heated to 190 degrees F. for hot-hold. Because we did not know at what point or time the gravy reached 135 degrees F., we were not sure how long it had taken to cool to 135 degrees F. Corrective action: Decision was made to reheat to 165 degrees F. and then it will be cooled to 135 degrees F., then put on ice to cool rapidly to 70 degrees F. in two hours, then to 41 degrees F. in four more hours. Cooling should be monitored; pan should be placed on ice, and food should be stirred. Also food can be uncovered or loosely covered during the cooling time.
— Observed ice scoop for ice machine placed on top of machine and on top of dirty equipment. Ice scoop should be in a sanitized and clean scoop holder or tray. Corrective action: Ice scoop will be cleaned and sanitized.
— Remarks: Temperatures of TCS foods in the second section of walk-in cooler were slightly elevated 42-43 degrees F. PIC stated they had problems with section 3 of walk-in cooler, but it has been repaired. Section 3 was the coldest, so TCS foods were moved to section 3 and maintenance will be called to check.
