Health inspections: Nov. 14, 2015

AMERICUS — The following food service inspections were conducted recently by Sumter County Environmental Health.
• Tracy’s Fried Chicken, 612 N. Lee St., Americus — Aug. 13 — 87 B
— Observed food storage container on counter that was sticky/greasy. Food storage containers should be washed/rinsed and sanitized, so they are clean to sight and touch. Observed dish racks in dish wash area with grease build-up on them. These should be washed/rinsed and sanitized so they are clean to sight and touch.
— Observed cheese in refrigerator at 45 degrees F. (Mayo was at 45 degrees F., but it was not TCS). TCS foods must be cold held at 41 degrees F. or colder. Cheese was placed on ice. There are two other coolers with soft drinks, candy. One appears to be able to maintain TCS foods at 41 degrees F. TCS foods will be stored in that refrigerator. If it won’t hold foods at 41 degrees F., service will be called to check refrigerator or new commercial grade refrigerator will be purchased. Inspection follow up in one week.
— Remarks: No food prep at time of inspection; limited amount of TCS foods thawed to temperature.
