Health inspections: June 15, 2016

AMERICUS — The following food service inspections were conducted by Sumter County Environmental Health.
• Ruby Tuesday, 102 Lonnie Lane, Americus — March 1 — 90 A
— Observed potentially hazardous food cold-held at greater than 41 degrees F. on salad bar (potato salad and eggs not properly cooled before placing on bar). CFSM will use time as public health control to hold/discard after four hours. Corrected On-Site.
— Observed mop stored on floor. Mops should be hung up to dry when not in use. Mop was hung up. Corrected On-Site.
• SAM Shortline Excursion Train/Georgia Department of Natural Resources, 2549 U.S. Highway 280 East, Cordele — Dec. 10, 2015 — 91 A
— Observed chicken patty sandwiches in a warmer with temperatures of 126 degrees F. to 130 degrees F. Time/Temperature control for safety foods for hot-holding should be held at 135 degrees F. or hotter. Chicken patties will be discarded at 2 p.m. They will be using time for this day only. Corrected On-Site.
— Remarks: Spoke with the manager about the new food rule changes and gave her the handouts about the changes.
• Sarah Cobb Elementary School, 1901 Valley Drive, Americus — March 10 — 100 A
• Sassy A’s Restaurant and Catering, 2717 U.S. Highway 280 East, DeSoto — March 4 — 88 B
— Spoke with the PIC about employee health and she was not able to show or tell what were the symptoms/illness that will be of concern. No verifiable documentation that employees had been informed of employee health reporting. Documents that were previously provided will be located and available to EHS to review.
— Observed handwash sink filled with water that was unable to drained because of paper clogged in drain. Hand wash sink was cleaned out and drained. Corrected On-Site.
— Observed Time/temperature control for safety (TCS) foods (salmon patties and slaw) with no date markings on the containers. TCS foods that were prepared in house should have a discard date, seven days after is was prepared. Salmon patties and slaw was thrown out. Corrected On-Site.
— Observed no air gap under the three-compartment sink. An air gap is required under the three-compartment sink in order to prevent backflow. Air gap will be installed by March 14.
— Observed no lighting in the food storage area and also no lights in the bathroom. Lights should be adequate in order for a customer or employee to see. Light bulb will be installed.
• SDI of Americus, LLC, 1309 E. Lamar St., Americus — April 18 — 90 A
— Observed tomatoes on prep table stored at 46 degrees F. TCS foods must be cold-held at 41 degrees F. or colder. Tomatoes were thrown out.
— Observed trash and food debris on the ground in the garbage receptacle area.
— Observed light in walk-in freezer not working and missing shield over light. Have light repaired and replace shield by: 05/05/2016.
